Stars is a common noun; don’t capitalize it. The same goes for universe.
Notice the comma added after universe because the sentence is compound.
At the end of time, the stars are burning out as they use up the last of their fuel. There is only one star left in the known universe, and all remaining life has gathered around it.
If there’s only one star left, the other stars aren’t burning the last of their fuel; they’ve already burned it, because they’re now gone.
